Summer of 2022 we planted over one ton of potato seed. We sold our crop to local chefs and supplied the finest restaurants in Aspen. During the winter 23/24 our indoor grow supplied edible flowers, herbs, and microgreens to chefs in town.
2025 was a 15 ton potato harvest.
