Summer of 2022 we planted over one ton of potato seed. We sold our crop to local chefs and supplied the finest restaurants in Aspen. During the winter 23/24 our indoor grow supplied edible flowers, herbs, and microgreens @moonsproutsmicros.
In 2023 we’ve expanded our menu and acreage, cultivating five .5 acres in rotation of potatoes, squash, greens, and flowers, as well as expanding into two greenhouses allowing us to grow tomatoes, cucumbers, and beans in our harsh high mountain climate. We sold all that we had. 2024 is in the works.
